This cookery course is for young people aged between 14 and 25 who want to learn essential cooking skills. You will learn knife skills and a range of dishes that incorporate a variety of cooking techniques. We will keep an eye on budget but also make sure the dishes are balanced and healthy. You will learn to cook and eat well yourself, and be able to entertain friends and family with simple, delicious, well cooked and well presented dishes.
Please note: No session during half term, 14th February
Week 1: Pizza from scratch. It’s surprisingly easy to make your own pizza and so much cheaper than ordering in! We will make two batches of dough and turn the second batch into bread rolls.
Week 2: Beef ragu. We will learn knife skills this week, chopping onions and vegetables and creating a ragu sauce that can be turned into chilli con carne, bolognaise sauce or cottage pie. A very versatile dish. Vegetarians just leave out the meat or substitute with quorn!
Week 3: Curry and rice. Choose a chicken or vegetarian option and learn to use spices to create a delicious curry. And we will cook rice so that you never need burn or under-cook it again!
Week 4: Pancakes and toad in the hole. Pancakes make a great snack, either sweet or savoury. While we are making a pancake mix, lets use some to make toad in the hole.
Week 5: Quesadillas and cheese sauce. More knife skills this week preparing our fillings for quesadillas made with simple wraps. We will also make a white sauce – another very handy skill – and add cheese.
Our goal is to enable you to become a competent cook, able to work with wholesome fresh ingredients to create delicious and healthy meals on a budget. If we succeed, you will never look a ready meal in the eye again!
This is a five session course on Wednesday evenings. Please arrive by 6.10pm and bring a container to take home the food you make each week. All ingredients are provided.
